Quick recipes for a healthy Christmas
Christmas is just around the corner and the supermarkets are filling up with chocolates and mince pies – it is hard to resist. To make sure you can continue to lose weight during the Christmas season without feeling deprived, we have some great recipes for you, which are fast, delicious and healthy!
Sticky gluten-free chocolate brownies
Ingredients (makes 12 brownies)
- 300 g black beans (cooked)
- 2 tablespoons cocoa powder
- 100 g coconut blossom syrup
- 2 tablespoons Coconut oil/li>
- Half a teaspoon baking powder
- 80 g dark chocolate
- 40 g almonds (optional)
- A pinch of salt, vanilla
- Square baking dish
How to prepare your chocolate brownies
Preheat oven to 180°C. Chop the dark chocolate and almonds and mix all the ingredints together well. Line a square baking dish with baking paper and fill with the brownie mixture. Place in the oven for 15-20 minutes. Leave to cool then cut into squares and enjoy!
Oat and banana cookies
Ingredients (makes 1 tray)
- 100 g oats
- 2 bananas
- 2 teaspoons peanut butter
- A pinch of cinnamon
This is how you prepare your oat and banana cookies:
Preheat the oven to 175 degrees Celcius. Mash the bananas and mix with the peanut butter. Add the oats and the cinnamon. Form the mixture into small cookies with your hands. Place in the oven for about 10-15 minutes. Done!
Beetroot Muffins
Ingredients (makes 12 muffins)
- 300g wholemeal spelt flour
- 50g cocoa powder
- 120g dark chocolate
- 200g coconut blossom sugar
- 1 sachet baking powder
- 6 tablespoons sunflower oil
- 350ml water
- 130g beetroot
- Muffin tray
This is how you make your beetroot muffins:
Preheat oven to 180 degrees Celcius. Finely grate the beetroot. Mix all the ingredients and divide the dough into the muffin cups. Place in the oven for 25-30 minutes. Done!
Blueberry Cinnamon Banana Bread
Ingredients (for 12 slices)
- 300 g wholemeal spelt flour
- 3 very ripe bananas
- 100 g blueberries
- 50 g walnuts
- 2 eggs or 2 tablespoons linseed with 2 tablespoons water
- 1 sachet baking powder
- 1 tsp cinnamon
This is how you make your banana bread:
Mash bananas well. Beat the eggs until frothy or add linseed and water. Add the remaining ingredients, except the walnuts, and stir well. Then fold in the chopped walnuts and pour the dough into a baking tin. Bake the bread at 180 °C for about 45 minutes.
Vegan Apple Tart
Ingredients (for one tart)
- 2 apples
- 1 tortilla wrap
- ½ tbsp. cinnamon
- ⅓ tsp. ground cloves
- ½ tablespoon lemon juice
- 2 bananas
This is how you prepare your tart:
Preheat oven to 180°C. Put the wrap in the oven proof pie dish and press it down well. Slice the apples very thinly with a knife. Mix the lemon juice and spices in a bowl and add the apple slices. Add the mixture to the pie dish and bake the tart for about 20 minutes or until the apple is cooked. Cut the banana into small pieces and serve with the tart.
Nutty Nougat Chocolates
Ingredients (makes 4-5 pieces)
- 4 tablespoons fine oats
- 1 tablespoon coconut oil
- 1 tablespoon of deoiled cocoa powder
- 25 g hazelnuts
- 1 pinch of cinnamon
- 50 g chopped hazelnuts
This is how you prepare your chocolates:
Mix all the ingredients in a bowl until you form a smooth paste. Then form the dough into round balls and press a hazelnut in the middle of each ball. Then roll the balls in the chopped hazelnuts. Stand at room temperature for 5 – 10 minutes.
