Colourful Couscous Salad for losing weight

Intro
A vegan couscous salad that everyone will enjoy. Ready in just 20 minutes and a great salad for losing weight.
You will need these ingredients for this salad for losing weight:
- 1/2 lemon
- 1 tsp. olive oil
- 75 ml tomato passata
- 2 cloves of garlic
- 100 g couscous
- 1/2 cucumber
- 1/2 pepper (yellow)
- 1 tomato
- 15 peppermint leaves (fresh leaves)
- A pinch each of salt, paprika powder and pepper (black)
Here's how you prepare this dish for losing weight:
- Squeeze the lemons and mix the juice with the oil. Add the tomato passata.
- Peel the garlic and crush with garlic press. Add to the tomato mixture.
- Stir the couscous into this mixture and leave to stand.
- Peel and chop the cucumber. Scald, skin and seed the tomatoes, then cut up small.
- Mix the vegetables and couscous and season with salt, pepper and some paprika powder.
- Rinse the peppermint, pluck from the stalks and fold in to the salad.
