You will need these ingredients for your Paleo Pumpkin-Almond Curry:
- 350 g pumpkin
- 1/2 onion
- 1 apple
- 0,5 banana
- 0,5 lemon
- 125 ml vegetable broth
- 50 ml coconut milk
- 25 g flaked almonds
- 1 tsp coconut oil
- 1 tsp curry paste
- 0,5 tsp cinnamon
- 0,5 tsp nutmeg
- A pinch of salt and pepper
Peel the pumpkin, remove the seeds and cut into bite-sized cubes.
Chop the onion. Peel the apple, remove the pips and cut into cubes. Sprinkle with the lemon.
Cut the banana into slices.
Heat the coconut oil in a large pan and sauté the onion and pumpkin for 5 minutes.
Add the vegetable stock and the coconut milk and cook for 15 minutes.
Add the curry paste and season with salt and pepper to taste.
Add the apple cubes, banana slices, flaked almonds and spices and stir carefully.
Let everything cook for another 5 minutes then enjoy!
